1 tbsp extra virgin olive oil
2 ripe small tomatoes, minced
1/2 cup red bel pepper, minced
2 cloved garlic, minced
2 tbsp flat leaf Italian parsley, chopped
2 tbsp fresh thyme, chopped
2 tbso fresh lemon juice
1/2 tsp sugar
1/2 tsp salt
1/4 tsp fresh ground black pepper
Heat olive oil in small frying pan, add everything and cook until slightly thickens. Spoon on top of fish. Serves 4.
