Carrot Cake

2 eggs
3/4 cup light brown sugar
1 cup grated carrots
3/4 cup vegetable oil
1 2/3 cups flour
1 1/2 tsp ground cinnamon
1 1/2 tsp allspice
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Preheat oven to 350 degrees

1. Shread carrots and set aside
2. Cream together eggs, sugar and oil until fluffy
3. Add flour, spices, soda and salt. Mix until just combined.
4. Fold in carrot
5. Bake in prepared 8x8 square pan for 35-45 minutes. Cool before cutting. Serves 9.
